My Go-To Pasta Sauce

The key to a great pasta is the sauce. Here is my go-to pasta sauce recipe (which varies depending on the ingredients I have on-hand). I like to make this as my pasta is boiling.
INGREDIENTS
olive oil (or grapeseed)
1 onion (I prefer Maui Sweet, but white or red will do)
fresh garlic (I like a TON) and/or garlic powder
1 bell pepper (any color)
canned San Marzano tomatoes (1 whole can or leftovers)
sea salt
black pepper
red pepper flakes
fresh herbs (ie. Basil or Italian Flatleaf Parsley)
fresh baby spinach (optional)
INSTRUCTIONS
Heat up some oil in your saute pan. Then toss in your chopped onion and peeled garlic (no need to mince- just throw in whole). Add sea salt, black pepper and red pepper flakes. You can also add garlic powder at this point if you're so inclined. Allow the onions and garlic to sweat. While your kitchen starts to smell like heaven, chop your bell pepper. I'm not a fan of green, so I'll use red, orange or yellow depending on what I have. Add your bell pepper and let everything marry. Now go grab your favorite wine. You could splash some in your saute pan if you're feeling inspired. Otherwise, just pour yourself a glass.
Now add your canned tomatoes. You can put as little or as much as you want. If I have an unopened can of whatever size, I'll usually use the whole thing. Otherwise, I'll use whatever I have left over in the fridge. Let this concoction simmer. Once it's reduced a bit, remove from heat and check your pasta. Once the sauce has cooled slightly, put it in your Vitamix (or blender). Blend and taste. Adjust seasonings at this point.
Put your sauce back into your saute pan. Once your pasta is al dente, put it into your sauce. Simmer and serve when you're ready!
To add even more vitamin richness to your sauce, finely chop fresh baby spinach and toss in your pasta. The spinach will wilt significantly and is a great way to bring even more body to your meal.
Place in your serving bowl and top with fresh Basil or Italian Flatleaf Parsley, a drizzle of olive oil and a pinch of sea salt and black pepper. Enjoy!
